Base (Nougat Layer):

1 cup almond flour

2 tbsp maple syrup or honey

2 tbsp almond butter (or peanut butter for a classic vibe)

Caramel Layer:

1 cup Medjool dates (pitted + soaked in hot water for 10 mins)

2 tbsp peanut butter

1 tbsp coconut oil

Splash of vanilla

Pinch of sea salt
Topping:

1/3 cup crushed roasted peanuts
Chocolate Coating:

1/2 cup dark chocolate chips or chopped dark chocolate

Make the Nougat Base:
Mix almond flour, maple syrup, almond butter, and a pinch of salt in a bowl until dough-like. Press into a lined loaf tin to form the bottom layer. Pop in the freezer while you prep the caramel. -
Blend the Caramel Layer:
In a blender or food processor, mix soaked dates, peanut butter, coconut oil, vanilla, and salt until smooth and sticky. Spread over the base layer. -
Add Peanuts:
Sprinkle the crushed peanuts evenly over the caramel and gently press them in. -
Freeze:
Freeze the whole thing for about 1–2 hours or until firm enough to slice. -
Slice & Dip:
Cut into bar shapes. Melt your chocolate with coconut oil and dip each bar or drizzle over the top. Place on a parchment-lined tray. -
Chill:
Let them set in the fridge or freezer until the chocolate is firm. Store in the fridge for up to a week—or freeze for longer!
